Intriguing. According to a researcher at the USDA’s Agricultural Research Service’s Citrus and Subtropical Products Research Laboratory,
refridgerating tomatoes seems to degrade their flavor.
I love tomatoes, but doubt my tomatoes would last long enough for my usual period of time of having them around. I wonder whether modifying the
hot water/air technique for berries, as
tested by NYTime Harold McGee, would work for prolonging the life of tomatoes outside of the fridge.
