Prolonging the life of berries


Harold McGee of the NYTimes confirms that putting berries in hot water or hot air for a short period of time (125 degrees+ for 30 seconds or so depending on the berry) can prevent berries and fruits from spoiling. Full article here.

I'm all for prolonging the life of my berries.  More fruit salad for me!
