White Bear (白熊): New York

White bear (白熊) is another of those must-hits in Flushing, known for their wontons in hot oil (紅油餛飩).

We absolutely loved this. The hot oil is not that spicy and is accompanied by scallions, pickled radishs (?), spicy oil and I think szechuan peppercorns.

The wontons are wonderful, the skins like slippery freshly-made/freshly cooked noodles. This contrasts with the hot oil and peppercorns, which have a more earthy texture and flavor. And then add the pickled radishs and scallions which added a third flavor and texture.

Wonderful wonderful stuff. I really wish I lived closer.
