Homemade Americanized Chinese food ?!?

I've apparently been on a big Americanized Chinese food cooking kick the past few days: Mapo dofu, Hot & Sour soup, and beef & broccoli. They've ranged in their overall quality: the Mapo dofu came out quite decent, the beef & broccoli okay and the hot & sour soup - well, let's just say that I haven't quite got the hang of soups just yet.

I must say that it was really rather interesting to taste all three dishes in a distinctly homemade style (read: fresh ingredients). But I think I'm setting myself up for disappointment the next time I have to go to a Americanized Chinese restaurant.
